Do you find cooking a bit of a chore? Here is a great recipe for chicken pot roast all you need is a slow cooker, some chopped vegetables, seasoning of your choice and some chicken thighs. I generally get one more chicken thigh than I need I shall reveal the reason for this a bit later on.
Place the vegetables in the bottom of the slow cooker and then place the chicken thighs on top. Mix your flavouring into half a pint of boiling water and pour it into the slow cooker. Cook on Low for approximately 2 hours. Cooking times will vary due to size of slow cooker and quantity of food.
You will know when it is ready as the chicken should be cooked through thoroughly and the vegetables should be soft. Serve up onto plates/dishes leaving the spare chicken thigh and a few vegetables as this can be used to make a delicious nutritious soup. Once luke-warm, remove the thigh bone and run these leftovers through a blender or use an electric hand musher to blend them into a soup which can be stored for another day.
